I love rice, my favorite thing to make is risotto, but it can be difficult and time consuming to make. SO I like to make flavored rice in my rice cooker, it’s not as creamy as risotto but it tastes amazing. It’s hard to go wrong with parmesan, onions, butter and garlic though, right?

Parmesan Risotto rice cooker recipe

I make this cheesy creamy rice in my rice cooker every time we have salmon; it just complements the savory salmon so well!

Ingredients

  • 3 Tbsp butter
  • ¼ C chopped onion
  • ½ tsp minced garlic
  • 1 C aborio rice or other risotto rice
  • 1 2/3 C chicken broth
  • Salt and pepper
  • 2 Tbsp extra butter
  • 3 Tbsp freshly grated parmesan cheese

Instructions

  • Put 2 Tbsp butter, onion and garlic in the rice cooker.

  • Turn the rice cooker to Cook. when the butter is melted let it "cook" an additional 2 mins.

  • Add the arborio rice, stir and cook 10 mins, until the rice is mostly clear with a small white center in each grain.

  • Add broth, salt and pepper, stir and close the lid and reset cooking time, Because there is so much liquid it will take longer to cook than a normal setting so leave yourself extra time.

  • When the machine is done let sit for at least 10 mins or until your ready to serve then stir in the last 1 Tbsp of butter and parmesan.

Traditional risotto rice, arborio rice, is the best way to go. It goes great with my Lemon herb baked salmon or my pork tenderloins.

    My husband and I talk about making risotto all the time but we have never gotten around to it. I think this is the perfect recipe to remedy that!

      this one is SO good, but get the right rice, it makes ALL the difference. I tried it with Japanese short grain rice and it just wasn’t right!

    When you say reset cooking time, how long do you reset for after initially cooking the rice the 10 minutes and before letting it sit for 10 minutes? I don’t think it said?

      My rice cooker doesn’t have a time setting, it is computerized and so after self timing that first 10 mins you stop it and restart it FRESH so it will take however longyour machine setting normally takes at that point.

    I’m a new to using rice cookers and thought I’d try this recipe. While it is very good, I would like to ask about the cooking time. Within 1/2 hour my rice cooker went to the “warm” setting. All the liquid was absorbed but the rice wasn’t done. I had to add more liquid twice and restart it but it still only cooked for about an hour. Did I do something wrong?

      what type of rice cooker do you have? Mine is a Japanese “smart” rice cooker so it doesn’t just go for a time but has a sensor. I’ve been making this rice for 10 years and never had it not work! ugh, I’m not sure what could have gone wrong.

    This is SO good! Had to duct tape the switch so that it wouldn’t kick to “warm,” but it worked really well. Thanks for sharing!

      oh no! I haven’t had that problem! When I restart my machine it doesn’t click to warm! I do have a really expensive machine. But I used to use my cheap one and it worked okay then too. But glad you liked it!

    I wanted a risotto recipe for my rice maker so I would not have to stand and stir and add both for about an hour.
    This risotto was perfect! Easy, low standing there watching it time. Flavor superb! I added a small amount of fresh chopped spinach. We loved it!! Thank you!!
